Good morning everyone! It’s nice to finally see some sun. It will be even nicer to see the sun tomorrow when I wake up in FLORIDA because it will actually be warm too. This morning we’re hanging around the house packing and getting ready, probably head out for a quick run, then to the cemetery for my Grampy’s ceremony and THEN we hop on a plane that heads south. Yes, that’s a lot of stuff for one day. It’s happening. But first, I share with you one of my favorite snacks right now. No, it’s not easter candy. Well, it might be but here’s my healthier option: almond butter packs!
I’ve recently become obsessed with these things and if you don’t believe me then take a look in my car where you will see about 10 thousand almond butter wrappers. I got turned on to this stuff when a man from the company Barney Butter (No, I don’t understand the name either) started taking my spin classes. Then he started bringing free samples. Then I was addicted. They are the perfect snack for before I teach cycle classes and I’m excited to bring them along with me on long road rides this summer. They even come in a boatload of flavors. The little packages (which are my favorite for the convenience factor) can be bought online (amazon) and you can find the jars in various supermarkets. Whole foods, hannaford, etc. The taste is super smooth and by far the best almond butter I have tasted. I usually just eat the stuff right out of the package but if you’re fancy it would taste really good paired with an apple or some celery. Happy snacking. 🙂
Okay these are my new favorite snack for after working out. It can be my new favorite even though I’ve only had them once, right? I think I found the idea ages ago on Pinterest but then never really did anything with it until today. I picked up some honey crisp apples after I went to the Cumberland fair yesterday and I was dying to do something delicious with them! I put peanut butter, coconut (unsweetened), and semi sweet chocolate chunks on my apple slices and man oh man were they delicious! You could also use almond butter. Maybe try some homemade granola instead of the chocolate chunks on top? Now I’m ready to get creative! Give it a try. It’s really awkward to cut an apple into slices like this and you’ll have a bunch left over. Just eat those slices normally. 🙂 Happy Fall!!
I’m off to teach TRX and Kettlebells in a bit but just have to share this salsa recipe first. This is the first week in almost a year that I have not taught a SINGLE spin class. I had a great weekend last weekend visiting with my friend Liz- going to the beach, out to dinner, and to the Gelato Fiasco TWICE. Then I got a sore throat, then I lost my voice, and then I got conjunctivitis. Hence, no spin classes this week. Tri for Preservation is on Sunday and I have not done a single workout this week and I have had way too many milkshakes. We’ll see how it goes…
So how about some salsa?! This is almost embarrassing to post because it’s really not even a recipe. I had no idea that salsa was this easy to make or I would have been doing it for years. So here’s a list of ingredients you can chop up and combine to make your own homemade salsa. We used this to put on fish tacos. Delicious. Oh, and the best part of making your own salsa? NO CILANTRO! I hate it and it’s in every descent salsa. If you like cilantro have at it but I used curly parsley instead and loved it. Okay here we go:
- Chopped Tomatoes
- Diced Peppers
- Diced Red Onion
- Curly Parsley, Cilantro, Other herbs…
- Lime Juice
- Salt and Pepper to taste
1. Combine tomatoes, diced peppers, red onion, and parsley.
2. Squirt a bit of lime juice over everything and mix. (A little goes a long way! Try before you add more)
3. Add a touch of salt and pepper.
You can easily customize this recipe. I actually think I ended up adding corn to everything at the end. Mango salsa? Pineapple? Roasted red pepper? Also, This is a great make- ahead recipe. The flavors get better the longer it sits in the fridge! There are still a few weekends of summer left. Go impress your friends and bring this to the next BBQ. You’re welcome!
What a weekend! I managed to pack so much fun in the past three days it’s going to make going back to work tomorrow extra hard! On Saturday we went to the farmer’s market, had a donut from the holy donut, and planted our garden. Then Angus went to Orono to visit a friend and I stayed home and went for a walk in the Fore River Sanctuary with my friend Emily and went to a yoga class at Greener Postures later in the evening. Sunday I slept in and decided to go for a long run around Back Cove and to East End beach. After an afternoon of lounging on the couch we had some friends over for a BBQ. This morning we went out to breakfast at The Front Room, then went mountain biking on the trails around Portland and had milkshakes from duckfat. So much food, so much exercise, and so much fun!
Oh, wait… this post is supposed to be about Protein Bites. These are my latest creation in my effort to not buy granola bars from the store so much. They are DELICIOUS and taste almost like those little peanut butter balls dipped in chocolate that people make at Christmas time. Okay! Here’s the recipe:
- 1 cup oats
- 1/2 cup peanut butter
- 1/2 cup unsweetened shredded coconut
- 1/3 cup brown rice syrup (you can find this at wholefoods… might be able to use honey or agave as well. Really anything sticky that’ll hold these delicious things together)
- 1/4 cup chocolate protein powder (I use Plant Fusion)
- 1/4 cup chocolate chip
Mix everything together, roll into balls, and refrigerate 🙂 Oh, and eat!
