Farmer’s Market Taco Salad


For the past two summers I’ve managed to have jobs where I have Wednesdays off. The best part about this is that I get to go to the farmer’s market in Monument square! This past Wednesday I took a fabulous bike ride into town and got everything I needed to make this delicious taco salad. It is quick and easy to make and healthy! You don’t HAVE to find everything at the farmers market, but I did and I think it was even more delicious because of it. Here’s how to make it:

Farmer’s Market Taco Salad

Serves 4 People 

What you’ll need:
1 head of romaine lettuce
2 ears of corn
2 green peppers
1 big carrot
2 tomatoes
1 lb ground beef, turkey, or chicken
Garlic Powder
Sea Salt
Shredded cheese (optional)
Tortilla chips (optional)

1. Prepare the salad part. Put a pot of water on to boil the corn. Then chop up your lettuce, tomatoes, and green peppers. I shredded the carrot into the salad. When the corn is done, run it under some cold water and then cut it off the cob and toss it into your salad! Easy!

2. Cook the meat. In a frying pan on medium start cooking your meat. When it is almost done add some spices! I sprinkled in some cumin, garlic powder, sea salt, and pepper. When your meat is finished cooking add the salsa. I did about half a cup. The salsa will act like a dressing for the salad and be delicious.

3. To serve, simply put some salad on your plate and top with the meat. If you want you can sprinkle some shredded cheese on top and serve with tortilla chips. If you’re going for healthier, omit that step. Either way, it’s going to be tasty.
